Bread Camp
A five-day intensive focused on artisan bread baking.
Bread Camp is designed for serious home bakers, aspiring bakery or micro-bakery owners, and professionals already working in the industry who want to strengthen their skills across a wide range of breads. The course covers both naturally leavened and yeasted doughs, giving students experience with styles such as sourdough, yeasted breads, pretzels, challah, bagels, and pizza.
Classes are highly hands-on and collaborative. Students mix, shape, and bake every day, working in small groups with close guidance from experienced instructors. While the course is intensive and skill-focused, the atmosphere remains approachable and engaging, making it equally valuable for those building toward professional goals and dedicated home bakers looking to go deeper.

Croissant Camp
An intensive, hands-on course focused on croissants and laminated doughs.
Croissant Camp is designed for serious home bakers, aspiring bakery owners, and professionals who want to expand their range and confidence with croissants and viennoiserie. Over the course of the camp, students work through a wide variety of products and techniques, from classic croissants to more creative and contemporary styles.
The course includes extensive hands-on practice with lamination and shaping, as well as techniques such as bi-colour doughs, cross lamination, and advanced shaping and finishing. Students produce and bake daily, working in small groups with close instructor guidance. While the focus is on precision and consistency, the atmosphere remains collaborative, engaging, and enjoyable.
