What We Do

Teaching - for home bakers and professionals alike, we share the art and science of artisanal baking. Online and in-person classes are playful, irreverent, informative, and hands-on.

Consultation - Does your bakery need a kick in the pants? Starting a new bakery? We can assess what’s working and what’s not. Increase your customer base, pump out more products, fine-tune your menu, and choose the right tools for the job (we save people money that way).

Who We Are

When Mark built a brick oven, he ignited a lifelong love of baking. Now specializing in artisan bread and Viennoiserie (laminated pastry, think croissants), Mark has served as a technical baker for an organic flour mill, where he acquired in-depth knowledge of ancient and organic grains, local milling, and recipe development. He also held the position of Head Baker and Manager at an acclaimed artisan bread and pastry shop. Mark has gained an extensive social media following with over 108K followers on his Instagram page, plus a large following on TikTok and YouTube.

Ever since he was a little kid in Mexico, Luis has been baking with a passion. His high school job was baking in a professional commercial bakery for three years. After studying kinesiology in university, he went on to become Mark’s apprentice for 2 years. His training led to work in Toronto at the biggest artisanal bread manufacturing facility in Canada – so Luis knows about high quality and the efficiency needed for massive bakery outputs. In his spare time, Luis loves music, boxing, museums, and cooking Latino-American food.

Where We Are

We live and work in beautiful Chilliwack, British Columbia, on the traditional, ancestral and unceded territory of the Stó:lō Coast Salish peoples.

We travel nationwide for bakery consultations, and offer many online classes, and classes in person at our Chilliwack baking studio.
